Ingredients
 

GOAT CHEESE AND HONEY MUFFINS

  • 2.12 oz (60 g) butter (Melted)
  • 1 Tbsp (8 g) Greek Honey
  • 1.76 oz (50 g) almond flour
  • 0.71 oz (20 g) all-purpose flour
  • 1.76 oz (50 g) Grated Parmesan
  • 3 (90 g) egg whites
  • 2 oz (55 g) goat cheese (Crumbled | Original recipe calls for "Crottin de Chèvre")

WHIPPED GOAT CHEESE AND HONEY (my personal addition)

  • 2 oz (55 g) goat cheese (Original recipe calls for "Bûche de Chèvre")
  • 2 tsp (10 g) Greek Honey

Instructions
 

GOAT CHEESE AND HONEY MUFFINS PREPARATION

  • Place butter together with the honey in a small sauce pan and heat on low until melted. Set aside.
    2.12 oz butter, 1 Tbsp Greek Honey
  • In a mixing bowl, mix the almond flour together with the all-purpose flour, grated parmesan cheese and egg whites. Add the cooled melted butter/honey. Add the crumbled goat cheese. Mix until combined.
    1.76 oz almond flour, 0.71 oz all-purpose flour, 1.76 oz Grated Parmesan, 3 egg whites, 2 oz goat cheese
  • Scoop your batter into your Geo Tray.

BAKE!

  • Bake for 12 minutes at 350F/180C. (Every oven heats differently, monitor your Muffins from 10 minutes). It is ready when they are golden and the toothpick inserted comes out clean.
  • Once your Goat Cheese and Honey Appetizer Muffins are out of the oven, let them cool down completely in the mold. Then flip them over onto your serving tray.

WHIPPED GOAT CHEESE AND HONEY PREPARATION (my personal addition)

  • Once your muffins have cooled down, prepare the whipped goat cheese and honey.
  • Place the goat cheese in your food processor together with the honey. Whip it for 2 minutes, until light and fluffy. Transfer your preparation into a pastry bag. Refrigerate until it is time to serve. When ready to serve, take your pastry bag out of the refrigerator and pipe the creamy mixture on top of each muffin. Enjoy & Bon Appétit!
