These golden, crispy churros with a soft and light inside rolled in cinnamon sugar are the perfect treat to make at home. With just a few simple ingredients and a dash of love, you can whip up this classic dessert that everyone will adore because who can resist homemade churros??!
Add the all-purpose flour to the bowl of your stand mixer, make a well and set aside.
7.94 oz all-purpose flour
In a medium saucepan, bring the spring water, butter, granulated sugar and salt of a rolling boil over medium-high heat. When it boils, immediately take the pan off the heat.
8.82 oz Spring Water, 2.12 oz butter, 1 tsp granulated sugar, 1/16 tsp sea salt
Pour the hot liquid over the flour and stir hard with a sturdy spatula or with a wooden spoon until all the flour is incorporated, 30 to 60 seconds.
Add the eggs lightly beaten into an omelet. Mix at medium speed with the paddle attachment on. Scrape down the sides of the bowl when necessary. Mix until the dough is smooth and glossy and the eggs are completely incorporated. The dough should be thick, but should fall slowly and steadily from the leaf when you lift it from the bowl.

Transfer the dough to a a pastry bag fitted with a large star tip. Set aside.
COOK
Heat oil to 356F/180C.

Carefully pipe 6-inch | 15 cm pieces into the hot oil. It's best to fry about three at a time. Fry on either side for 90 seconds to 2 minutes or until golden brown.
Remove with tongs or with a spider strainer. Allow to drain on a paper towel for about thirty seconds before placing in the cinnamon sugar. Spoon sugar over and remove excess. Enjoy & Bon Appétit!NOTE:These are best enjoyed while warm or the same day.
