Dairy-Free French Crêpes | Sparkling Water

These light and airy dairy-free French crêpes are one of my favorite recipes to make when I want something simple but truly special. Made with water and sparkling water, they are naturally lactose-free and quick to make, they’re perfect for a cozy breakfast, weekend brunch, or an elegant dessert you’ll want to make again and again.

Ingredients
 

  • 7.05 oz (200 g) spring water (Lukewarm)
  • 1 Tbsp (15 g) granulated sugar
  • 2 eggs (Large | At Room Temperature)
  • 1 tsp (5 g) vanilla bean paste
  • 4.95 oz (140 g) all-purpose flour
  • 1/16 tsp (0.38 g) sea salt
  • 2.82 oz (80 g) flavored sparkling water (@sanpellegrino_us @sanpellegrino_official)

IMPORTANT | a few tips to get the best crêpes

  • Eggs should be at room temperature.
  • Spring water should be lukewarm.
  • Always start mixing from the center going outwards.
  • Make sure your pancake pan is hot enough.
  • The faster you tilt and rotate the pan, the better the crêpe batter spreads.
  • Place the cooked crêpes between 2 ceramic plates while cooking them - They will stay warm, soft and will not dry out. Enjoy!

DAIRY FREE CRÊPES PREPARATION

  • In a mixing bowl, add the lukewarm spring water together with the granulated sugar and vanilla bean paste. Mix until the sugar has melted.
    Whisk in both eggs.
    4.95 oz all-purpose flour, 1 Tbsp granulated sugar, 1/16 tsp sea salt, 2 eggs
  • Add the all-purpose flour and salt. Mix until well combined.
  • Pour the sparking water ; here I use my favorite: San Pellegrino Zero Clementine & Peach flavored water. Give it a gentle whisk not to brake all the bubbles which will make your crêpes nice and airy.

COOK!

  • Heat your Pancake pan on a medium heat 5 minutes prior starting making your "Crêpes".
    When ready, lightly oil the surface with a kitchen paper.
    Pour one large scoop of batter at the center of your pan ; then right away tilt and rotate the pan in order to spread it uniformly.
    Once one side is cooked, flip it over. Cook it for a few seconds more. NOTE: Remember to place each time the cooked crêpe between 2 ceramic plates so it stays soft and warm.
  • Serve as is or with your favorite filling ; Chantilly and fresh fruits is always a great option as well. Enjoy & Bon Appétit!
