Ingredients
 

CHAI SPICE STAR BREAD

  • 6.45 oz (183 g) milk (Whole | Lukewarm)
  • 1.23 oz (35 g) sugar
  • 2 tsp (4 g) instant yeast
  • 1 egg (Large)
  • 2.10 oz (60 g) butter (Softened | At Room Temperature)
  • 10.58 oz (300 g) all-purpose flour
  • 1 tsp (6 g) sea salt

STAR BREAD FILLING

  • 3 Tbsp (42 g) butter
  • 1 1/2 tsp (3 g) chai spice
  • 1 egg (For Eggwash)

Instructions
 

BREAD PREPARATION

  • In a microwave safe bowl, add the milk. Heat for 15 seconds at a time until it is lukewarm (45 seconds for me). Set aside.

  • Place the sugar and instant yeast in the bowl of a stand mixer.
    1.23 oz sugar, 2 tsp instant yeast
  • Add the lukewarm milk on top of the sugar/instant yeast. Whisk together to combine and cover with a plastic wrap until the mixture becomes frothy (about 10 minutes).
  • When ready, add the egg, butter, all-purpose flour and sea salt. With the paddle attachment on, beat for 3 minutes on medium low speed. Scrap the bowl down when necessary. NOTE: The dough should stay soft but firm enough for you to roll it into a ball.

  • RISE: Shape your dough into a ball and place it in a greased bowl, cover with a plastic wrap and let it rise for about 2 hours at room temperature or 1 1/2 hours in a turned off preheated oven (100F/37C). It will double in size.

ASSEMBLY

  • Place your Large Bonmat on the top of your Large Perforated Baking Sheet. Set Aside.
  • Once the dough has doubled, punch dough to deflate and scrape it out onto the Roul'Pat. Divide it in four equal pieces.
  • Roll each piece of dough into a thin 10 inch | 25.40 cm circle.
  • Place the bottom circle on your Large Bonmat . Top it with one tablespoon of butter, sprinkle 1/2 teaspoon chai spice on top. Then layer the remaining circles and filling on top. Using your hands to bring back the edges into a circle shape. NOTE: The top layer does not have filling on it, so only 3 of the 4 circles will be topped with filling.
    3 Tbsp butter, 1 1/2 tsp chai spice
  • Place a 3 inch | 7.50 cm bowl in the center and make an indent. This is the center of the star.
  • Cut 16 even strips from the edge to the limit created by the bowl. Using both hands, take two strips and twist them away from each other twice.
  • Then press the two ends together to make a point. NOTE: Your star bread will have 8 points. 
  • Cover the shaped bread with a clean linen and let it rest for 20 minutes while preheating the oven to 350F/180C.

BAKE!

  • Remove the linen and brush your bread with the eggwash.
    1 egg
  • Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your bread from 20 minutes). It is ready when golden brown and does not feel hallow to the touch.
  • Once your Chai Spice Star Bread is out of the oven, let it cool down completely on your baking sheet. When ready, slide it onto a serving plate and dust some powdered sugar on top. NOTE: Like every baked bread, it is best enjoyed the day of. Bon Appétit & Happy Holidays!
