In a mixing bowl, season the chicken thighs with the seasonings: Paprika, chili powder, Greek oregano, salt, pepper (To Taste) and olive oil. Mix until the chicken is coated with both the oil and seasoning.
Heat a large frying pan over medium heat. Once hot, add the olive oil and chicken thighs with marinade. Cook the chicken for 5 minutes, without moving it. This will allow the chicken to sear.

Flip the chicken thighs over, reduce heat to medium-low, and cook for about 5 more minutes or longer until it's completely cooked through. NOTE: Use a digital thermometer to check doneness, USDA recommends 165°F | 74°C. Remove from heat and set the chicken aside on a plate.
APRICOTS PREPARATION
Wash the abricots under cold water and slice them. Remove the pit. Set aside. NOTE:YES, we are keeping the skin to enjoy all the vitamins!
1 Lb apricots
To the same, now empty, frying pan, still on medium heat, add the sliced apricots.Slightly cook them in chicken juices, without overcooking, - about 3 to 5 minutes. NOTE:Do not over cook them as they will get mushy if you do, so keep an eye on them.At the very end, add the honey and lime juice. Taste and adjust sweetness if you like it more sweet.

ASSEMBLY
Add back the cooked chicken nestled in between the apricots. Reheat briefly, then remove from heat.Garnish with fresh lime slices. Enjoy & Bon Appétit!
