Ingredients
 

THE REAL CEASAR DRESSING

  • 2 oz (55 g) anchovies
  • 8 oz (225 g) mayonnaise
  • 2 garlic gloves
  • 2 Tbsp (30 g) lemon juice
  • 2 tsp (10 g) Dijon Mustard
  • 1 tsp (6 g) Worcestershire sauce
  • 1.76 oz (50 g) parmesan cheese (Grated)
  • salt and peper (Season to Taste)

CAESAR SALAD

  • 1 Romaine Lettuce (Triple washed | Chopped)
  • 1/3 cup (35 g) parmesan cheese (Shaved)
  • 1 cup (30 g) croutons

SMASH TACOS

  • 2 lbs (900 g) ground chicken
  • 6 flour tortillas (Taco Size)
  • salt and pepper (Season to Taste)
  • butter (For cooking)

THE REAL CEASAR DRESSING PREPARATION

  • Anchovy paste - Drain the tin of oil-packed anchovy fillets and place them on a cutting board. Mince the fish finely with a chef's knife, then use the back of a fork to mash and smear them into a smooth paste.
    NOTE: If you want a smoother, more spreadable texture, drizzle a few drops of high-quality olive oil into the fish while mashing.
    2 oz anchovies
  • In a mini food processor, add the mayonnaise, anchovy paste, garlic gloves, lemon juice, Dijon Mustard, Worcestershire sauce and parmesan cheese. Season with salt and pepper to taste.
    Pulse until you get the texture desired. Taste and adjust to your liking. Set aside in a serving bowl, cover with a plastic wrap and refrigerate.
    8 oz mayonnaise, 2 garlic gloves, 2 Tbsp lemon juice, 2 tsp Dijon Mustard, 1 tsp Worcestershire sauce, 1.76 oz parmesan cheese, salt and peper

CAESAR SALAD PREPARATION

  • To a large serving bowl, add the triple washed diced Romaine salad, shaved parmesan cheese, croutons and half of the Caesar dressingg. Toss until lettuce is coated. Set aside.
    NOTE: You will have plenty of Caesar salad left, serve it on the side with your tacos.
    1 Romaine Lettuce, 1/3 cup parmesan cheese, 1 cup croutons

SMASH TACOS PREPARATION

  • Prepare the Chicken - Divide the ground chicken into 6 equal portions. Place 3/4 tablespoons of chicken in the center of each flour tortilla, pressing down gently to create an even layer. Sprinkle with salt and black pepper.

  • Cook the Tacos - Heat a frying pan over medium heat with a small amount of butter. Place the tortillas, meat side down, in the skillet and cook over medium-low heat for 2-3 minutes or until cooked through. Flip the tacos and cook the other side until crispy and golden.
    Fold the cooked tortillas in the holder so they keep their shape.
    6 flour tortillas, butter

ASSEMBLY

  • Add the Caesar salad to the chicken tacos. Garnish with additional shaved parmesan cheese and extra dressing.
    Serve right away. Enjoy & Bon Appétit!
