Chestnut Cream Panna Cotta | Snake of Wood, Chinese New Year

Kung Hei Fat Choy! Celebrate the Lunar New Year with a twist! This Chestnut Panna Cotta shaped like the Snake of Wood is creamy, velvety, and infused with the rich flavor of chestnut purée and vanilla bean. It is the perfect way to honor friends and family born in the Year of The Snake, while indulging in something sweet. Bring good fortune and joy to your festivities with this unique dessert!
NOTE:If you are using the same Snakes Ice Cube Tray, you will only need 3/4 of this recipe.
CHESTNUT PANNA COTTA PREPARATION
Place the gelatin sheets in a small bowl full of cold water. Let it set for 10 minutes.
3 gelatin sheets
In a medium sauce pan, heat on medium low the heavy cream together with the chestnut purée and vanilla bean paste. Continue to whisk until it starts boiling. Once it starts boiling, bring the heat to low and let it cook for 2 minutes. Then, remove from heat and drop the scooped gelatin in. Stir until desolved. Let it cool down for a little bit.
14.11 oz heavy cream, 1 tsp vanilla bean paste, 4.23 oz chestnut purée
Fill the 4 wells of your Ice Cube Snakes with your chestnut panna cotta and freeze for a minimum of 4 hours or best overnight.
ASSEMBLY
On each service plate, scoop a tablespoon of chestnut purée and place a candied chestnut on top. Then, place the frozen panna cotta at the center. Let it thaw for 10 minutes before enjoying your Chestnut Cream Panna Cotta. NOTE: I made this recipe to Celebrate the Snake of Wood for the Chinese New Year. Enjoy & Kung Hei Fat Choy!
