Caramelized Apple Muffins

Whether is it for a breakfast on the run or an afternoon snack, these incredibly tall Caramelized Apple muffins will hit the spot!

Ingredients
 

  • 1 Large apple (Diced)
  • 2 Tbsp (30 g) butter
  • 2 Tbsp (30 g) sugar
  • 1/4 tsp (1.5 g) ground cinnamon
  • 2 eggs
  • 1/3 cup (70 g) sugar
  • 1/2 cup (100 g) vegetable oil
  • 1 1/4 cup (160 g) flour (Sifted)
  • 1 1/4 tsp (6 g) baking powder

Instructions
 

  • Preheat oven to 350F/180C.
  • Place butter in a medium sauce pan and heat on low until melted. Add the diced apple and let it cook until tender. Then, add the sugar and ground cinnamon. Let it caramelized. Set aside.
  • In a mixing bowl, whisk the eggs and sugar together. Add the vegetable oil.
  • In another mixing bowl, mix the flour and baking powder together.
  • Then, combine the wet ingredients to your dry ingredients. Whisk until smooth.
  • Using your spatula, carefully fold in the caramelized apples.
  • Place your Muffin Flexipan® Tray on the top of your medium perforated baking sheet
  • Using your mini Ladle, scoop the batter into each well of your Flexipan®.
  • Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 15min).
  • Once your Caramelized Apple Muffins are out of the oven, let them completely cool down before unmolding. Serve, Enjoy & Bon Appétit!
