Place butter in a medium sauce pan and heat on low until melted. Add the diced apple and let it cook until tender. Then, add the sugar and ground cinnamon. Let it caramelized. Set aside.
In a mixing bowl, whisk the eggs and sugar together. Add the vegetable oil.
In another mixing bowl, mix the flour and baking powder together.
Then, combine the wet ingredients to your dry ingredients. Whisk until smooth.
Using your spatula, carefully fold in the caramelized apples.
