Ingredients
 

BLOOD ORANGE RICOTTA COOKIES

  • 5.47 oz (155 g) all-purpose flour
  • 1/2 tsp (2 g) baking powder
  • 1 Tbsp (9 g) poppy seeds
  • 1/4 tsp (1.5 g) sea salt
  • 5.29 oz (150 g) granulated sugar
  • 1 blood orange Zest (From 1 Blood Orange)
  • 2 oz (57 g) butter (Softened | At Room Temperature)
  • 1 egg (Large)
  • 7.58 oz (215 g) Ricotta cheese
  • 0.53 oz (15 g) Blood Orange juice (Save some for the Glaze)
  • 1 tsp (5 g) vanilla bean paste

BLOOD ORANGE GLAZE

  • 3.17 oz (90 g) powdered sugar
  • 1 Tbsp (15 g) milk
  • 1 tsp (7 g) Blood Orange juice
  • 1/4 tsp (1.25 g) vanilla bean paste

Instructions
 

BLOOD ORANGE RICOTTA COOKIES PREPARATION

  • In a mixing Bowl, whisk all the dry ingredients together: all-purpose flour, baking powder, poppy seeds and sea salt. Set aside.

  • In a separate mixing Bowl, rub the sugar and blood orange zest together. Let it set for 10 minutes. NOTE: This will help develop the aromas.
    5.29 oz granulated sugar, 1 blood orange Zest
  • Add the softened butter and beat until light and fluffy. Add the egg, ricotta cheese, blood orange juice and vanilla bean paste. Scrap the bowl down when necessary. Fold the dry ingredients. IMPORTANT: Do not over mix. NOTE: The dough will be a bit sticky that's normal.
    2 oz butter, 1 egg, 7.58 oz Ricotta cheese, 0.53 oz Blood Orange juice, 1 tsp vanilla bean paste

ASSEMBLY

  • Preheat oven to 350F/180C.
  • Scoop about 2 tablespoons of dough onto your prepared baking sheet, keeping them 2 inch | 6 cm apart.

BAKE!

  • Bake for 15 minutes at 350F/180C (Every oven heats differently, monitor your cookies from 12 minutes). It is ready when they have puffed up and are barely golden around the edge.
  • Once your Blood Orange Poppy Seed Ricotta Cookies are out of the oven, let them cool down for about 10 minutes, then transfer them onto a cooling rack so they can cool down completely before adding the glaze on top.

BLOOD ORANGE GLAZE PREPARATION

  • Once your cookies have cooled down, prepare the glaze. In a mixing bowl, whisk together the powdered sugar with the milk, blood orange juice and vanilla bean paste.
    3.17 oz powdered sugar, 1 Tbsp milk, 1 tsp Blood Orange juice, 1/4 tsp vanilla bean paste
  • Add a teaspoon of glaze on top of each cookie ; you may decorate them with blood orange slices or zest. Once the glaze has set, slide the cookies onto a serving platter to share or store them in a tin metal box (They stay fresh up to 2 days). Enjoy & Bon Appétit!
