Treat your family and friends to these delicious apricot and chocolate chips mini cakes! With just a few simple ingredients and minimal time required, they are the perfect sweet treat to satisfy your sweet tooth like never before!

Ingredients
 

  • 4 eggs
  • 3.50 oz (100 g) sugar
  • 5.30 oz (150 g) Greek Yogurt (Vanilla Bean | Trader Joes)
  • 2 oz (55 g) vegetable oil
  • 6.50 oz (185 g) all-purpose flour
  • 1 Tbsp (12 g) baking powder
  • 9.35 oz (265 g) apricots (4 Large | Chopped)
  • 2.40 oz (70 g) dark chocolate chips

Instructions
 

MINI CAKES PREPARATION

  • In a mixing bowl, whisk the eggs and sugar together. Add the Vanilla Greek yogurt, vegetable oil, all-purpose flour and baking powder. Mix until combined. Fold the chopped apricots and chocolate chips. NOTE: Same some abricots/chocolate for the toppings.
    4 eggs, 3.50 oz sugar, 5.30 oz Greek Yogurt, 2 oz vegetable oil, 6.50 oz all-purpose flour, 1 Tbsp baking powder, 9.35 oz apricots, 2.40 oz dark chocolate chips
  • Scoop your batter into your Mini Loaf Tray. Sprinkle more chocolate chips and apricots on top if you like!

BAKE!

  • Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your cakes from 28 minutes). It is ready when the toothpick inserted into the center comes out clean.
  • Once your Apricot and Chocolate Chips Mini Cakes are out of the oven, let them cool down for about 10 minutes. Then, unmold onto your cooling rack. Enjoy & Bon Appétit!
