Roasted Chicken & Broccolini Quiche

This quiche is perfect if you have some leftover Roasted Chicken that you’d like to use. Also, instead of buying a pre-made Shortcrust Pastry, why not make your own? Of course, I have the Easiest Pastry recipe and it is right HERE!

Roasted Chicken & Broccolini Quiche

This Roasted Chicken & Broccolini Quiche is perfect to use any left over rotisserie chicken you may have! And to eat more Greens!

Ingredients
 

HOMEMADE SHORTCRUST PASTRY (MAKES 1)

  • 2 cups (250 g) bread flour
  • 1 tsp (5 g) Sea Salt
  • 8 tbsp (120 g) butter (Softened, At Room Temperature)
  • 1 egg yolk
  • 3 1/2 tbsp (50 g) Bottled water (At Room Temperature)

ROASTED CHICKEN & BROCCOLINI QUICHE

  • 1 1/2 cups Leftover Roasted Chicken (Pulled)
  • 1 bunch Broccolini
  • 2 Shallots (Sliced)
  • 1 tsp (4 g) Tuscan Oil
  • 3 eggs
  • 3/4 cup (180 g) heavy whipping cream
  • 1 1/3 cup (325 g) milk
  • 1 tsp (2 g) onion powder
  • 1/2 cup (50 g) parmesan cheese (Grated)
  • 1/2 cup (55 g) shredded cheese
  • Lavender Salt (Season to Taste)
  • Pepper Mil (Season to Taste)

Instructions
 

HOMEMADE SHORTCRUST PASTRY (MAKES 1)

ROASTED CHICKEN & BROCCOLINI QUICHE

  • Preheat oven to 400F/200C.
  • Place your Pie Flexipan® Mold on the top of your Medium Perforated Baking Sheet. Set aside.
  • Roll the shortcrust pastry on the Roul'Pat™, shape it to the Flexipan® with the help of the Cake Server Knife. Lightly pierce the shortcrust pastry with a fork. Reserve in the refrigerator.
  • Soak the Broccolini under cold water for a few minutes, then rinse off. Towel dry and chop them into 3 or 4 pieces each. Set aside.
  • Peel and slice your shallots. Set aside.
  • Heat a frying pan on medium. Once hot, add the Tuscan oil and sliced shallots. Cook until golden. Then, add the pulled Roasted Chicken and Broccolini. Cook for 10 minutes. Set Aside.
  • In a mixing bowl, whisk together the Eggs, heavy whipping Cream, Milk and Onion Powder until all combined.
  • With your spatula, incorporate the Parmesan cheese, Shredded Cheese and Cooked Preparation. Add Salt and Pepper (Season to taste). Mix well.
  • Take the Flexipan® out of the refrigerator and pour your preparation.
  • Bake for 30 minutes at 400F/200C. (Every oven heats differently, monitor your quiche from 25min).
  • Once your Roasted Chicken & Broccolini Quiche is out of the oven, let it cool down for about 10min. Then, Unmold, Serve and Enjoy with a salad on the side. Bon Appétit!
