Oven Baked Belgium Waffles
The purists might say to eat great waffles you need to make them in a waffle maker. I get the point, but have they tried to make them in a Flexipat®?!
I have been making Laura’s recipe for over a year now, and I can confirm they are the real thing! Crunchy from the outside and soft from the inside.
My AllClad Waffle maker is the best, but I don’t want to spend hours in front of it where with this recipe, in 25min max I am able to make and bake 8 waffles all together. I challenge you to make them in a Flexipat® and tell me what you think!

Oven Baked Belgium Waffles
Ingredients
- 2.5 oz (70 g) butter (melted)
- 3 eggs
- 1.5 oz (40 g) sugar
- 9 oz (250 g) milk
- 1 tsp vanilla extract
- 6 oz (175 g) flour
- 1 tsp baking powder
- 1/8 tsp salt
Instructions
- Preheat oven at 415F/220C.
- Place butter in a small sauce pan and heat on low until melted. Set aside.
- Separate egg yolks from egg whites in two mixing bowls.
- In the first mixing bowl, whisk together egg yolks and sugar. Add, the milk and vanilla. Then, slowly incorporate the flour, baking powder and salt. Finish by adding the the melted butter.
- In the second mixing bowl, whip the egg whites until stiff peaks. Then, using a spatula carefully fold it into your first preparation.
- Place your Waffle Flexipat® on the top of your perforated baking sheet.
- Pour your batter into the Flexipat® with the mini ladle.
- Bake for 11 minutes at 415F/220C. (Every oven heats differently, monitor your waffles from 9min)
- Take your waffles are out of the oven and flip them onto a Silpain®.
- Bake for an additional 5 minutes at 415F/220C. (Every oven heats differently, monitor your waffles from 4min)
- Once your waffles are out of the oven, let them cool down for about 1min. Then, Unmold, Serve and Enjoy! Bon Appétit!

Hi! Can I replace the perforated baking sheet and silpan with just a regular baking sheet? Can’t wait to try this!
Hi M, yes totally! You can place your waffle mat on top of a baking sheet. I would recommend to place both waffle mat and baking sheet in the oven once it has been preheated then carefully pour the batter on top. Then if you’d like them more crunchy you can place them back in the oven once you have taken then out of the mold. Loved it so much. I made it for my half belgian toddler (didn’t add the sugar) and he is obsessed. Could this recipe work for a waffle maker ?
