Lime Fondant Yogurt Cake (Without Butter)

Today marks a very special day for me. It is my Favorite Person in the whole wide world’s Birthday: MY DAD! He was gone too soon in My Life and I miss him terribly. Nevertheless, I bet he would have liked this recipe! He was a real Gourmand and Gourmet, more than anyone would know!

Lime Fondant Yogurt Cake (Without Butter)

Made without butter, this Lime Fondant Cake is super creamy and tasty! I have baked it countless times in the past, it's a winner each time!

Ingredients
 

  • 3 eggs
  • 1/4 cup (50 g) sugar
  • 1 cup (250 g) strained yogurt
  • 1/3 cup (45 g) corn starch
  • 1 1/2 cups (185 g) all-purpose flour
  • 2 1/2 tsp (12 g) baking powder
  • 1 lime (Zest + Juice)
  • 1/2 cup (125 g) milk

Instructions
 

LIME YOGURT CAKE PREPARATION

  • In a mixing bowl, whisk the eggs and sugar together. Add the yogurt, corn starch, all-purpose flour and baking powder. Whisk until smooth.
  • Grate the zest from your lime directly into your mixing bowl. Then, press the lime juice. Add the milk and mix until incorporated.
  • Pour the batter into your Flexipan®
    • Save

BAKE!

  • Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 20min). It is ready when the toothpick inserted comes out clean.

  • Once your Lime Fondant Yogurt Cake is out of the oven, let it cool down completely in the mold. Cover with a plastic wrap and refrigerate overnight. Then, unmold, serve and enjoy! Bon appétit!
