CHOCOLATE GANACHE
- 2 oz (60 g) dark chocolate chips
- 1/4 cup (60 g) heavy whipping cream
CHOCOLATE CAKE
- 1/2 cup (40 g) unsweetened cocoa powder (Van Houten)
- 5 1/2 tbsp (80 g) sugar
- 1 cup (125 g) all-purpose flour
- 1 tsp (5 g) baking powder
- 1/8 tsp (0.75 g) salt
- 2 eggs
- 3/4 cup (175 g) heavy whipping cream
- 1/2 cup (110 g) Vegetable Oil
- 1 tsp (4 g) vanilla bean paste
- 1/4 cup (65 g) dark chocolate chips (Ghirardelli)
DECORATION
- 1 cup (235 g) smarties
Instructions
CHOCOLATE GANACHE
- First prepare the chocolate ganache so it has time to set.
- Pour the heavy whipping cream into the Mini Round Mold and bring it just to a boil in microwave, about 30 seconds at a time. Add the dark chocolate chips and swirl to coat all chips. Allow to sit for 2 minutes, then stir. Set aside.
CHOCOLATE CAKE
- Preheat oven to 350F/180C. Place your Medium Round Flexipan® Mold on the top of your Medium perforated baking sheet.
- In a mixing bowl, whisk together all the dry ingredients (cocoa powder, sugar, all-purpose flour, baking powder and salt). Make a well and add the eggs. Gently start mixing inwards going outwards with your mini whisk. Add the heavy whipping cream, vegetable oil and vanilla bean paste. Mix until it is all incorporated. Fold your dark chocolate chips.
- Pour your preparation into the Flexipan®, flatten the batter if necessary with your spatula.
- Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your chocolate cake from 18min). It is ready when the toothpick inserted comes out clean.
- Once your Double Chocolate Cake is out of the oven, let it cool down for about 10min. Then, Unmold and set aside on your cooling rack.
ASSEMBLY
- Once your chocolate cake has cooled down, flip it over to your service plate. Then, spread uniformly your chocolate ganache and decorate to your liking with the Smarties on top. Enjoy & Bon Appétit!
