Fat Tuesday Instant Yogurt Donuts

DONUT DOUGH
- 1 cup (120 g) flour
- 1 1/2 tsp (7 g) baking powder
- 3/4 cup (190 g) strained yogurt
VANILLA GLAZE
- 2 cups (240 g) Confectioners sugar
- 5 Tbsp (75 g) butter (melted)
- 3 Tbsp (45 g) milk
- 1 tsp (5 g) Vanilla Extract
- Food Colorant (Fat Tuesday Colors: Purple, Green and Golden Yellow )
- Sprinkles (Fat Tuesday Colors: Purple, Green and Golden Yellow )
Instructions
DONUT DOUGH
- In your mixing bowl combine flour, baking powder and yogurt.
- Tranfert the sticky dough in your pastry bag (Do not add extra flour). Let it rest for 30 minutes.
- Bring the oil to 340F/170C and fry the donuts in batches until golden. (To fry the donuts safely, pipe a dollop out of your pastry bag and use your Kitchen Scissors to cut the dough). Put your donuts on a kitchen towel while preparing the Vanilla Glaze.
VANILLA GLAZE
- Place butter in a small sauce pan and heat on low until melted. Set aside.
- Then, in a mixing bowl, whisk together the confectioners' sugar, vanilla extract, milk and cooled melted butter.
- For Fat Tuesday, I have divided the glaze into three smaller bowls and added a different food colorant in each: Purple, Green and Golden Yellow.
- Toss your Donuts in the glaze. Place them on a rack for the excess of glaze to drop and decorate with Sprinkles. The Glaze takes about 30 minutes to set. Then, Serve and Enjoy! Bon Appétit!
