Easy Sheet Pan Pancake (Pannukakku)

Easy Sheet Pan Pancake (Pannukakku)

PANNUKAKKU BATTER
- 4 tbsp (55 g) butter (melted)
- 2 1/2 cups (610 g) milk
- 1/4 cup (50 g) sugar
- 2 eggs
- 2 cups (250 g) flour
- 1 1/2 tbsp (10 g) flour
- 1 1/2 tsp (6 g) baking powder
CHOCOLATE GANACHE
- 4 oz (115 g) dark chocolate chips
- 1/2 cup (115 g) heavy whipping cream
Instructions
- Preheat oven to 350F/180C.
- Place your Flexiflat™ on the top of your Medium Perforated Baking Sheet. Set Aside.
PANNUKAKKU PANCAKE
- In a small sauce pan, bring the milk and butter to a warm temperature. It should feel nicely lukewarm. Beat on a medium low speed for 1 minute. Set aside.
- In a mixing bowl, whisk together sugar, flour and baking powder. Make a well and add the eggs. Gently start mixing inwards going outwards with your mini whisk. Add the warm milk mixture, a splash at a time while continuing mixing. Mix until it is all incorporated.
- Pour your batter into your Flexiflat™. Evenly spread with your spatula.
- Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 20min). It is ready when the slightly brown on top and toothpick inserted comes out clean.
- Once your Pannukakku Pancake is out of the oven, let it cool down for about 5min. Trace your offset spatula around and flip it over your bonMAT™. Spread the Chocolate Ganache and gently roll it onto your serving plate. Pour more ganache on top and serve warm! Enjoy & Bon Appétit!
CHOCOLATE GANACHE
- Before the end of the cook time, prepare your Chocolate Ganache.
- Pour the Heavy Whipping Cream into the Mini Round Mold and bring it just to a boil in microwave, about 30 seconds at a time. Add the dark chocolate chips and swirl to coat all chips. Allow to sit for 2 minutes, then stir.
THERMOMIX RECIPE
- Place butter into mixing bowl and melt 3 min/60C/speed 1.
- Add the milk and eggs. Mix 20 sec/speed 4.
- Add the sugar, flour and baking powder. Mix 45 sec/speed 4.
- Pour your batter into your Flexiflat™. Evenly spread with your spatula.
- Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 20min). It is ready when the slightly brown on top and toothpick inserted comes out clean.
- Once your Pannukakku Pancake is out of the oven, let it cool down for about 5min. Trace your offset spatula around and flip it over your bonMAT™. Spread the Chocolate Ganache and gently roll it onto your serving plate. Pour more ganache on top and serve warm! Enjoy & Bon Appétit!
