Jamaican Guinness Spiced Bread (Easter)

Embrace the tantalizing flavors of Jamaica with this Easter delight! This Jamaican Guinness Spiced Cake is a heavenly blend of rich spices, moist cake, and a hint of Guinness stout ; everyone will be asking for seconds!

Ingredients
 

JAMAICAN SPICED BREAD

  • 2 oz (57 g) butter (Melted)
  • 1.94 oz (55 g) light brown sugar
  • 1.76 oz (50 g) granulated sugar
  • 3 oz (85 g) honey (I used Thym Honey)
  • 0.35 oz (10 g) molasses
  • 1 tsp (5 g) vanilla bean paste
  • 1 egg (Large)
  • 8.82 oz (250 g) Guinness Stout
  • 8.82 oz (250 g) all-purpose flour
  • 2 tsp (8 g) baking powder
  • 1 tsp (2 g) ground cinnamon
  • 3/4 tsp (1.5 g) ground nutmeg
  • 3/4 tsp (1.5 g) ground all spice
  • 1/2 tsp (3 g) sea salt
  • 2.65 oz (75 g) sun-dried cherries
  • 2.65 oz (75 g) raisins

VANILLA GLAZE (My Personal Addition)

  • 2.47 oz (70 g) butter (Melted)
  • 8.47 oz (240 g) powdered sugar
  • 1.59 oz (45 g) milk
  • 1 tsp (5 g) vanilla bean paste

Instructions
 

JAMAICAN SPICED BREAD PREPARATION

  • Place butter in a small sauce pan and heat on low until melted. Set aside.

  • In a mixing bowl, whisk in together the light brown sugar, granulated sugar, honey, molasses, vanilla bean paste, cooled melted butter, egg and Guinness stout.

  • In a separated mixing bowl, mix in the all-purpose flour, baking powder and spices (cinnamon, nutmeg, all spice and salt). Drop in the dried cherries and raisins, mix to coat.

  • Make a well and fold in the wet ingredients. NOTE: Do not overmix.
  • Pour your batter into your Classic Loaf Mold use your spatula to flatten the edges around. Then, coat the tip of your spatula with vegetable oil and dip it into the center of your batter to form a line (lengthwise). This will create a beautiful line on your baked cake.

BAKE!

  • Bake for 40 minutes at 350F/180C. (Every oven heats differently, monitor your Cake from 35 minutes). It is ready when the toothpick inserted comes out almost clean.
  • Once your Jamaican Guinness Spiced Bread is out of the oven, let it cool down completely in the mold. Then place it on your service platter.

VANILLA GLAZE PREPARATION

  • Once your cake has cooled down, prepare the vanilla glaze.
  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk together the powdered sugar, vanilla extract, milk and cooled melted butter. Pour the glaze right away on top of the cake.
    2.47 oz butter, 8.47 oz powdered sugar, 1 tsp vanilla bean paste, 1.59 oz milk
  • Spread it over as you have enough glaze for the entire cake. Enjoy & Bon Appétit!
